"In love" to me sounds like something you feel. It seems temporary.
"Loving someone" implies caring for someone. I guess because it's more of a verb.
I think a lot more than this is required to maintain a long-lasting relationship - understanding, communication and compromise... I guess I'd have to pick the former - loving someone enough that you want to do all of that, to work for it to last.
