@Ashly I haven't made it in at least 25 years or so, but except for the salsa, sausagez and flour tortillas, it's all from scratch. I'll continue in the next reply.
@Ashly The last time I made these was for my ex wife before she left me in January 1999. First shred, skin on, two medium or one large russet potato, soak them in lemon water to rinse out excessive starch, then pat dry with paper towels, fry the shredded potatoes in extra virgin olive oil and butter until golden brown, salt and pepper to taste, set them aside in a bowl in a warm oven set to the lowest heat, wrap about four burrito sized flour tortillas in tinfoil and place in the oven as well. Caramelize diced sweet yellow onions, various color diced bell peppers, and two medium cans of drained sliced black olives in extra virgin olive oil and butter, add a splash of red wine vinegar and a dash of salt then set those aside in a bowl. Brown about a pound of breakfast sausage, Jimmy Dean's in the tube is the best, Farmland brand is good too, after that's browned add the onions and olives into the sausage, add in six extra large eggs beaten with a splash of whole milk and scramble. When the eggs are cooked thoroughly turn off the heat, get the tortillas and hashbrowned potatoes out of the oven, smear sour cream on the tortilla, scoop on some sausage, veggie, and scrambled eggs, add the potatoes on that, top with salsa, I prefer Pace brand mild, then fold, and if you wish, turn them into breakfast chimichangas by frying them in butter only in a skillet until golden brown on all sides. cc: @Lilnonames @Zaphod42
