You can certainly change your surname, by deed poll.
As for severing all parental control that might be possible through the courts.
As for the Birth Certificate you can only correct an error.
Removing the wrong father’s details
You can apply to change who the recorded father is if you can prove that the man named on the certificate is not the natural father of the child. Examples of proof include:
1 a DNA test record from an approved tester
2 a court order
3 evidence that confirms the name of the true biological father
4 other evidence that confirms the recorded father could not have been the child’s natural father

@MrAverage1965 Government departments are only interested in keeping an audit trail so they just ask one to put it in writing. The problem is know-it-all jobsworths in private companies who insist one has to have a deed poll or even a "deed of poll" - thus proving they haven't the faintest idea of what they're babbling about. Most people who change their surname don't bother with a Deed of Change of Name.

You can change your entire name if you want. Then you could disappear from their lives without telling them your new name and they wont be able to find you (easily).

At 18 your parents don’t have any legal say over you in most countries with no additional actions

In most places yes you can change it - over here (UK) it is called changing it by deed poll.

Emancipation just gives you what you get at 18 by nature, earlier, whenever it is granted
