it offends me when people say “Mexican restaurants”

Instead of saying Spanish restaurant or Latino restaurant

Because why do Americans just assume that the only Latino residing people are Mexican?

That just irks me

It also irks me when people don’t understand culture and lump People together

People assume all Asians are Chinese

Or all Latinos are Mexican.

We do have Spanish restaurants in, the US, which serve the cuisine of Spain, such as paella. I would never refer to any restaurant with Mexican or Latino cuisine as "Spanish." To me, that sounds like referring to an American restaurant as British. We are no longer colonies of European powers. (I would also never refer to a Spanish restaurant as Mexican.)

If I refer to a Mexican restaurant, I do specifically mean Mexican. I will refer to a Cuban restaurant as Cuban, a Nicaraguan restaurant as Nicaraguan, etc. Lumping them all together as "Latino restaurants" would be like lumping together Italian, French, and German restaurants as "European." I could do that, it but I don't see it being very helpful.
