Peachy Midsummer Cake! [I Am Wiccan]
Just in time for those of us celebrating Midsummer (I had no decision ability whether to put this recipe in a witchy themed group or a recipe one and I got to this group first haha)
Peach slices form sun rays around the cake, and the lemon zest gives the sponge a sprinkling of warm yellow to celebrate the summer, and longest day of the year!
- 100g butter
- 130g confectioners sugar
- 3 eggs
- 1 tsp vanilla
- 150g all purposelour
- 1 1/2 tsp baking powder
- 30g chopped walnuts
- zest of 1 lemon
- 1/4 tsp salt
- tin of peach slices
🌼 Whisk the butter and sugar together until light and fluffy. Then add the eggs one at a time, before adding the vanilla.
🌼 Sift in the flour and baking powder, add the salt and lemon zest, and then mix it together well.
🌼 Pour the mixture into a greased and lined cake tin (I used a 7inch tin), and smooth it down.
🌼 Sprinkle the chopped walnuts over the top, and then arrange the peach slices to form sun rays around the cake.
🌼 Bake for 35-40 minutes, until golden brown and a skewer inserted into the middle comes out clean.
