I was having fun pulling bamboo roots out a few years ago, those things are insane. I had to use an extra long crowbar that I would hammer into the root with a sledge hammer, then do my best to bend it over and jump on it. That would loosen it..

soak the ground with water and use a digging iron bar, also a hand winch with rope or chain is very helpful
