I use 1/3 ground pork to lean ground beef ratio,two eggs,1/2+1/2 panko to seasoned breadcrumbs as needed for the right consistency ,one large minced onion and a splash of liquid smoke.

Don't apologize for beef only, it's the best way to go. Especially for meatloaf. I've found the best recipes don't use a pan, you just form the loaf and leave it free on a foil lined baking sheet. That way you get browning all around, and don't have 3 sides that just aren't done enough and are too wet all the way through.

Pound of grou d chu k, fine diced onions, cel ery, carrot, garlic, milk, egg, unflavored gelatine, bread crumbs, frozen grated pepperjack cheese, soy sauce, better than bullion,, catsup, pepper. Bake and put a spicy brown sugar, hot sauce, and ketchup sauce on top. Broil to bubbling.
