Don't apologize for beef only, it's the best way to go. Especially for meatloaf. I've found the best recipes don't use a pan, you just form the loaf and leave it free on a foil lined baking sheet. That way you get browning all around, and don't have 3 sides that just aren't done enough and are too wet all the way through.
