Put on some good music so the vibes can sink into the meal,or just hum parts of the chorus you can remember from 80's hits you haven't heard in forever.Wash your hands before,during and after.
I use 1/3 ground pork to lean ground beef ratio,two eggs,1/2+1/2 panko to seasoned breadcrumbs as needed for the right consistency ,one large minced onion and a splash of liquid smoke.
Knead this until it looks good and mixed or a few minutes after you are truly bored with this exercise.
You already preset the oven to 375? That's pretty clever.
Top the formed loaf with a generous layer of catsup then strips of bacon,usually 3 thick ones.
Cut a decent amount of fancy little potatoes into thirds,hit 'em with a drizzle of EVOO,kosher salt and chopped fresh rosemary. Toss 'em around in between doing the dishes so they can brown all over.
Sometimes you might pour off some of the bacon grease to keep things from getting too wild.
I usually serve this with brown gravy splashed over it.
If company is coming I garnish with a sprig of fresh parsley,but if they're not then I'm pondering that midnight sandwich cold with a lot of mayo. Win.
