Today, my father forgot how to double-click.

Not only did he forget how to double-click, he is sitting there insisting that he's never done it in his entire life. One of the single most basic things in Windows for the last 30 plus years, and he claims never to have done it.

I'm not handling it well. This is scary to me, and he's demanding to know what the big deal is, and still insisting he's never done it.

Could be stress related. Your dad does seem to like to move things around with mental gymnastics, and not sit still. I hope that for you and your family. I'm just saying the options aren't spent yet.
I hate to tell you this but speaking from experience it only gets worse.

@LordShadowfire dementia slowly peels away everything a person ever was. It's cruelty on steroids. Dealing with it toughens you up, because you don't have a choice.

I'd suggest looking into care homes for him, but I know how stubborn he can be.
Lost my mom to dementia, it's so rough. Take care of yourself.
