Misattribution of arousal
In 1974 Donald Dutton and Arthur Aron conducted "the bridge study".
They placed a male or female interviewer on a bridge and at the end of the interview with the strangers, they'd give their number to them. They'd then measure the number of calls.
Control condition: One took place on a stable bridge
Experimental condition: The other on an unstable rickety bridge
What happened was that the people on the rickety bridge would be significantly more likely to call the interviewer afterward. This was found to be due to a phenomenon called misattribution of arousal, wherein the increased heart rate and stimulation of the situation was mistaken to a degree for heightened arousal towards the person. This may also apply to some situations where people seemingly bond romantically over dangerous situations.
How this relates to life
1. This can also apply to people experiencing anxiety, people with high caffeine intake sometimes experience heightened heart rate and general arousal of their nervous system, this can then manifest as a panic attack due to the lack of knowledge as to why it is happening. The panic is then misattributed to the situation they found themselves in, eg. a car. This is how phobias and panic disorder can be developed.
2. When dating it's theorized (there may be tests also) that if you go on dates that arouse your senses and heartrate like going to an amusement park on a rollercoaster, that may amplify your feelings of attraction. It won't create it where there is none but it may enhance the experience. You can become habituated to the same experiences which leads to the next part..
Habituation When a person becomes used to certain stimuli, this is what makes the treatment of anxiety and phobias possible as exposure therapy is the process of gradual voluntary exposure to anxiety-provoking stimuli. It's essentially the process of becoming braver by confronting whatever bothers them.
In terms of dating, this is why it can be good to switch up the scenario as it will become stale, if you were wanting to apply this knowledge of course. A bit of fun and food for thought for you anyway.
