If you're making a hearty tomatoey red meat sauce, red wine is a great addition. A classico chianti or a sangiovese are common choices. If you're making a bolognese with wine, milk, celery, carrots, onions, just a few tomatoes, and seasoned with a little nutmeg, a white wine is preferred .. perhaps a Pinot Grigio.
