Buy some boneless skinless chicken breasts, slice lengthwise (to get more out of it, pound each one out). Place chicken in a bit of olive oil, black pepper, and Italian seasoning. Let sit for about 2 hours. Just before you remove them, pre heat oven to 325F and on a tin foil lined pan, bake them for about 20 mins. When ready, remove, set aside. As they rest, thinly slice some onion, tomato, chop up some basil, add some washed, drained dark kidney beans, add a touch of garlic salt, some red wine vinegar & olive oil, add chicken and get after it!

Here's another "Asian" chicken dish I made: Took party wings, rubbed w/ a bit of olive oil, baked at 355F 1 Hr. Made a sauce of soy sauce, a bit of garlic salt, brown sugar, peeled, grated ginger, a squeezing of some fresh orange and wasabi paste. I used to make a very good fried rice, using brown rice, and very finely diced vegetables, including mushrooms, green onions, and peanuts. I lost the recipe, but it was published in a magazine and it was Cheryl Tiegs'.
