I'm trying to eat healthier for myself.

Here's what I did. I shredded a small potato and fried that in my no stick pan with shredded zucchini and mixed that all up and put salt and onion salt and garlic salt with it and fried it in olive oil. Would that make me gain weight? I'm not having it with any dressing or cheese. Thank you for your help.
Try making something like this. Dressing is red wine vinegar and olive oil. Lettuce, tomato, onion and hard boiled egg ( yolk optional)

This is sautéed in a bit of olive oil;: greens ( spinach or kale or other leafy green) onion, thin slices of tomato, pulp removed. In lieu of tomato or in addition some roasted red pepper. Plate on top
Of greens. Add strips of a hard cheese ( optional) and season as you desire. I used some red pepper flakes and a slight drizzle of olive oil.

@soar2newhighs You're killing me! Hahaha oh my goodness that looks so great! But you see I'm not eating cheese on my diet and I'm not really supposed to eat eggs but I think they'll be okay but I won't go crazy. Those are proteins so that would be good. And for right now, I can't use tomato. But I can sure use green pepper and green onions which I have here. You must be SOOOME COOK!! I can cook too and enjoy making delicious dishes that are healthy. I'm not supposed to have meat but I do believe I'm still going to just use my head and broil or bake some catfish. We'll see.
@LadyGrace suggestion: in lieu of what you should not/cannot have, think substitutes or don’t add what you’re not supposed to have. And if you do add things like eggs do so in moderation. Oh, watch the salt, too.
I truly enjoy cooking but of late I’ve been eating better.

@soar2newhighs oh yes I definitely do do that. But just for the sake of telling you what I'm doing is why I said I can't have this or I can't have that haha I can have anything but what counts is what I want to make my body feel better and work better.
Make more broth, plant based soups. ( carrots, onion, turnips, parsnips etc, and throw in some fresh dill or thyme. And if you want a bit more, add some chicken or pork pieces. Nothing too heavy. Use low sodium or homemade broths.

i chose to get Granulated Garlic , for salt i just use Salt , and i have chicken base in a shaker as well as a Beef gravy powder for whatever

@FurryFace I use the finer ground garlic powder. Garlic really gives the flavor, as you already know. It's good for you. That's really a nice stainless steel shaker set.

@Virgo79 oh my gosh was it delicious! No butter either. I'm cutting that out. Only cooking with olive oil. It was so great.
