What are some food items you can buy in a store that would have the longest shelf life?

My guess is pickles, honey and stuff like dry rice and beans

Honey will last for thousands of years, literally. Rice, if sealed and stored in an airtight plastic drum container, also lasts almost forever.

Cool dry storage is usually the key.

Canned coconut milk can last for 2 1/2 years.

Powdered milk can last up to 20 years if properly sealed in airtight plastic containers.

Canned fish can last for up to three years.

Dried lentils will last for five years with proper storage.

Instant coffee lasts for 10 years.

Powdered eggs last for 7 years.

Spaghetti or any dried pasta can last from 7 to 30 years.

Canned beans can last up to 30 years.

Dried corn lasts up to 10 years.

Dehydrated carrots can last up to 25 years.
I've never heard of powdered eggs. @4meAndyou

@Spoiledbrat I bought two packets on Amazon when I couldn't go to the grocery store because of Covid. You can use them like regular eggs in baking. In the army, they used to serve them to the soldiers instead of fresh eggs. I've heard they are nasty plain, but good if you make an omelette or serve them with salsa.
