We called gyoza "potstickers" or "asian dumplings" in the US. "Dim Sum" is usually a large selection of dumplings and cakes, like a buffet, where many types are served.
I am particularly fond of steamed dumplings, and I don't get them very often. Yours look very nice, and I am sure they are delicious. I would like to learn how to make the traditional sauce that is served with them.

In the US potsticker sauce is served with chopped raw scallions floating in the sauce.

dim sum is the round version of this yes xD sounds delicious :)
well in my japanese cookbook it says 6 spoons of soy sauce and 6 spoons of rice vinigar and then teaspoon of sugar and then another teaspoon of somethign i can't remember and then its done
