Some sausage contains a lot of fat. You might be having trouble processing fats for some reason. That usually indicates a problem with your gall bladder, or possibly with your liver. You might want to try baking your sausages on a rack, to drain the fat as they are cooking, and pierce them in several places before serving.
I have the same problem, so what I do is make soup with sausages IN the soup, sliced. Because the soup is homemade, I refrigerate it, and if there is fat in the soup I skim it off when it has solidified on the top of the soup.
