The air and water are replaced in a cyclical manner. All the water we have is all the water we've always had. It all gets filtered as its returned to the places we draw it from. We have a symbiotic relationship with the plants as well. We provide them with the carbon dioxide that they need for life and they provide us with all the oxygen we need for life.
As long as we keep a healthy balance and don't kill all the oxygen production, most of which comes from the oceans, and don't over populate to the point that water filtration cant keep up with demand, we'll be ok as far as our air and water supplies go. ..also, don't poison the water with chemicals that are of the same flash point and/or molecular size as water, like they've done with fracking.
