Getting enough sleep and regular sleep hours will help make recall of your dreams more successful. I've noticed vitamin B makes my dreams more vivid. For ultimate control, though, you could train your brain into lucid dreaming. Once you're able to recognize you're dreaming, without waking up, some can begin to change aspects of their dream.

Eat something that upsets your stomach before you go to bed. You might have some wild nightmares like I do when I have an upset stomach.
