I bought some new knives and I never use them because they're too sharp, and I'm afraid I'm going to cut myself. I've even cut my finger tips unloading them from the dishwasher because they are in there point side up, and I just grab them and forget they are there (my hub likes to use them).
@Spoiledbrat Being a serious home gourmet, and used to cook in restaurants, I like my cutlery sharper than razors, you can see the system I use in my own comment.

@Spoiledbrat Believe it or not, it's more dangerous to cut something with a dull knife because you have to use more force and it can slip. Professional chefs always use razor-sharp knives.

@Spoiledbrat I love these. Yes, you can get paper-cut-like cuts with them without even knowing when it happened but cutting tomatoes is priceless. We keep covers on them most of the time and handle with a lot of caution.
