Bourbon, because of how and how long it's aged.
It really doesn't have as strong a sourness that any whiskey has because of both.
BTW Hennessy the distillers of Cognac have a limited edition of bourbon. Mostly because of how smooth bourbon is.
Yet are not even considering any whiskey.
