Made lentil veggie soup today...

It's delicious... I've been tasting it, but now it's sitting in the pot until later tonight when I have dinner. Hopefully, it will last a few days and then I'll be on to making chili.

@Lilymoon It's a recipe from a friend's mom and I scribbled it down on the back of a piece of brown wrapping paper 😆. I will type it up and post it for you.

[b]Lentil Veggie soup[/b]

[b]Ingredients:[/b]

• ¼ Cup extra virgin olive oil
• 1 medium (I used large) onion – chopped[sep][sep][sep]
• 2 carrots – chopped
• 4 (I used 5 large cloves) cloves of garlic – minced or pressed
• 2 teaspoons cumin (I used 3)
• 1 (I used 1 ½) teaspoon ground curry powder
• ½ teaspoon dried thyme
• 1 large 28-ounce diced tomatoes – lightly drained
• 1 cup brown or green lentils
• 4 cups vegetable broth (I used 4 teaspoons “Better than Bouillon” paste and water)
• 1 cup water
• Pinch of red pepper flakes (I used ¼ teaspoon cayenne)
• 1 teaspoon salt
• Ground black pepper to taste
• 1 cup collard greens (I used kale) – chopped
• Juice of 1 large lemon

[b]Instructions:[/b]

1. Warm olive oil in a large pot over medium heat until it shimmers.
2. Add onions and carrots, cook until onions are translucent… stirring frequently.
3. Add garlic, cumin, curry powder and thyme. Cook until fragrant, or about 30 seconds stirring constantly.
4. Add drained diced tomatoes and cook for about 3-4 minutes, stirring often.
5. Pour in lentils, broth, and water, stir, and add the salt and cayenne or red pepper and ground black pepper.
6. Raise the heat until bringing the mixture to a boil, cover, and reduce to simmering.
Simmer for 30 minutes or until lentils are tender but are still holding their shape.
7. Transfer 2 cups of the soup to a blender and blend until smooth (I transferred the 2 cups to a large measuring cup and used my immersion blender).
8. Add the chopped greens and cook for an additional 5 minutes on medium heat.
9. Remove the pot from the stove and stir in lemon juice. Add more salt, pepper, cayenne, and/or lemon juice to taste.

Enjoy! You can freeze leftovers for several months, but I just keep it in the fridge until it’s gone.
