Ingredients
6 ears corn, shucked, rinsed
mayonnaise 1/4 c.
Mexican crema or sour cream 1/3 c.
grated cotija cheese 3 tsp.
chili powder
Chopped fresh cilantro and lime wedges, for serving
Directions For Grilling
Step 1Prepare a grill for medium-high heat; heat 5 minutes (or preheat a grill pan over medium-high heat).
Step 2Grill corn, turning often, until slightly charred all over, about 10 minutes.
Step 3Meanwhile, in a small bowl, mix mayonnaise and crema.
Step 4Transfer corn to a platter. Brush with mayonnaise mixture. Top with cotija, chili powder, and cilantro. Serve warm or at room temperature with lime wedges alongside.
yup, it´s pretty great, try it with lime and chili powder, or sour cream, a spread of mayo and grated cheese if you are not into spicy flavors. I prefer the corn in a cup presentation thou just because i´m a bit lazy and choose to use a spoon instead of chomping down the cob 😹
@icedsky I say that about almost every carb that comes my way...oh...these sweet potatoes won't hurt...this sugar coated oatmeal bar won't hurt, these carrots won't hurt me...I can get away with this SWEET onion dressing...truth to tell it ALL hurts when you are pre diabetic. 😢
