I made an untitled layered chicken casserole. I sauteed Portobello mushrooms in butter and garlic and set them aside.

Then I cut all the fat off 5 boneless skinless chicken thighs, and cut them into 1" chunks and cooked them in the mushroom and garlic butter. The chicken formed the bottom of the casserole and I salted them lightly.

The mushrooms were placed on top of the chicken, and last but not least, I had thawed out an enormous package of chopped spinach, and I carefully pressed every bit of liquid out of it until it was dry, absorbing the liquid with paper towels. I sprinkled it with nutmeg, and then I added about 1 cup of heavy cream and mixed it into the spinach, which I then spooned on top of the mushrooms.

I coarsely grated fresh parmesan cheese, and put sprinkles of it on top of the spinach, then I baked it at 350F for 25 minutes.

It was really quite delicious!

@faery Thank you, my friend! I like to experiment a little. If you know what flavors you like, and you have the basics of cooking, you can have loads of fun! (And LOADS of mess and cleanup! )🤣🤣🤣

@4meAndyou If someone cooked like that for me, they'd never cleanup in the kitchen again 😅

@faery It was delicious the 2nd night, too!!! I warmed it up for 20 minutes on the defrost setting of the microwave so the heat was gentle.

@4meAndyou Casseroles tend to be better 2nd night. I don't think I've ever used the defrost setting on my microwave. 😅
