Fried Plantains

I had a post which I am reproducing, because it was accidentally deleted. Plantains taste like a weird cross between a banana and a potato, and they are delicious twice fried and salted.

Plantain
Peanut oil or other frying oil
Salt.


Remove the peel from the plantain, and cut into pennies about 3/8" thick. Heat the oil in a frying pan, and when it sizzles with the addition of a tiny drop of water, add the plantain pennies. When they are slightly browned on one side, turn. Remove when both sides are slightly brown, and drain on a couple of layers of paper towels.

Place the plantain "pennies" on a flat surface such as a cutting board. Find a water glass or mug with a flat bottom, and use the bottom of the glass to "squish" the plantain pennies so that they are now 1/4" thick.

Return the "squished" pennies to the frying oil, and continue frying until completely browned.

Remove from the pan, and drain again on paper towels, sprinkle with salt...and when cool...enjoy!

They make a great snack!

I'll try it like you suggested.
I cooked them once b4 but the results were not as good as yours.
But I only cooked them once.

BTW, don't eat them raw, they don't tasted good.
