Tomato Based Tricolor Beans with Hot Italian Sausage

6-7 Hot Italian Sausages, baked, cooled and sliced.
3 cans Vegetarian beans, (nasty sauce rinsed off).
1 can black beans, drained and rinsed.
1 can red kidney beans, drained and rinsed.
5-6 stalks of celery, sliced.
4 cloves garlic, sliced.
2 very large onions, cut in half, and the halves cut into sixths.
1/2 cup Olive oil.
2 cans diced tomatoes, undrained.
2 cans tomato sauce, unseasoned.


Cook the Hot Italian Sausage (6 to 7 links), the night before, or at least an hour in advance. Bake at 350F for 30 minutes, turn, and bake on the second side for 30 minutes. Allow the sausages to cool in the fridge, and then slice about 1/8" thick.

In the largest frying pan you own, with deep sides and a lid, add the olive oil, celery, and onions and sauté on low heat until just barely softened, and then add the garlic. Sauté an additional 5 to 8 minutes. Stir well.

To the veggies, add all of the other ingredients, stir well, cover, and cook for 35 to 40 minutes on low heat. Check and stir fairly frequently, as beans will stick to the bottom of the pan.

That sounds so good. Thanks. We do a lot of sausage casserole dishes, stir fry, cabbage-sausage, etc. Normally start with smoked sausage rather than raw. But gotta try with 3-beans :)

Your recipe would easily cut in half. My tendency is to cook the veggies down to caramelize a bit and almost always include red and green sweet peppers. I love NOT mincing or chopping the veggies too fine. Like with the onion also with celery.

@Heartlander I like smoked sausage, too...but Hot Italian sausage, cooked and sliced thin, then simmered with the beans and tomatoes, adds just a hint of spiciness to the tomato sauce and the beans. And beans are so bland on their own, that they need a little kick! ☺️

@4meAndyou I can just imagine how the fresh Italian would lift the taste. I've avoided fresh/raw sausage mainly because I tend to go 2 to 3 weeks between deliveries and freezing and thawing takes a bit of planning :)

@Heartlander In a pinch, I can take frozen hot sausages and put them right in the oven. Because they're not that thick, you just have to add 15 minutes to the baking time.
