Have You Ever Cooked Quinoa or Eaten Some Of It?

I cooked some last night for the first time. Made a simple salad after it cooled down with chopped green onions, tomatoes, sweet orange mini-peppers, and peeled cucumber. Made a salad dressing with olive oil, lemon juice, a bit of red wine vinegar, salt, pepper, a bit of garlic powder & quite a bit of dry thyme herb. It made a large bowlful and thought we’d have it for dinner, but just finished a small bowl of what was left last night….it hit the spot. Tasted like a combination of tabouli and macaroni salad. I can’t eat wheat now so this filled the bill. Plus it’s a complete protein and has quite a bit of iron in it. Nice cool salad for summer. Am planning on making quinoa-maple pudding for breakfast tomorrow morning.

@SW-User Not saying I’m going vegan but if I did this would be on the menu about every day in one form or another. It’s very versatile in the dishes you can make and picks up the flavors you want to have.

@SW-User I regret not trying this years ago. Even if just because I can’t have wheat and other gluten grains. It satisfied my craving for tabouli last night and I had craved that one for years.

@SW-User The boy has eaten it several times because his friend is from Peru and his friends mother would give him a ride home from the YMCA sometimes but would take him to her house and let the boys have some food after they worked out. I don’t know what her recipe was but will ask him what it tasted like.
