Chicken Corn Chowder



6 medium potatoes, washed, peeled, cubed and boiled
2 small yellow onions, chopped
1 large red pepper, de seeded and chopped
4 Tablespoons butter
1/2 cup flour
1/4 tsp McCormick Cajun seasoning
1 heaping tsp salt
1/8 tsp ground black pepper
2 heaping teaspoons Hormel Applewood smoked bacon bits
1 large can white chicken meat, (12.5 oz)
1 quart 1 percent milk
1 (15 oz) can of creamed corn

Wash, peel, cube and boil the potatoes and set aside. Melt the butter in a 3 quart saucepan, and add the onions and the red pepper. Sautee until onions and peppers are softened. Remove from heat. Add 1/2 cup of flour and stir well to create a roux. Add the milk a little bit at a time, stirring constantly so that the flour and butter are incorporated into the milk. Add the corn and the cubed potaoes.

Add the bacon bits, spices, and chicken meat and stir again. Heat over medium low heat, stirring constantly, until the mixture JUST begins to bubble and is thickened.

I made a simple soup earlier. Ate it before photographing it)
Took a saucepan, 75 % filled w/ water.
Added chicken bouillon. Added large onion pieces then when it came to a boil, added diced pieces of peeled russet potato. Added salt / pepper, a pat of butter and pressed garlic paste. (Pressed garlic, touch of olive oil and salt, mashed by the tines of a fork)

In another pot, made a roux of flour and butter, w/ some milk.
Took some broth from the onion/potato mix, chilled it then added it to the Roux.
When it started to thicken I added the onion/ potato mix from the other pot,

@soar2newhighs I have a large bag of cooked russets in the fridge. I am trying to use all this stuff up before it goes bad. I might try that idea. I don't think I've ever added garlic to a pot of potato chowder. it sounds great!
@4meAndyouBe mindful of the garlic. Sometimes it can burn. You might want to add it to the chilled stock first.

@4meAndyou I failed to mention that I used regular onions in lieu of leeks which apparently had sold out.

@soar2newhighs I don't like using leeks anyway. They have so much sand in them...they have to be soaked...pain in my neck. I always have onions on hand.
@4meAndyou I made this last night. It has leeks and red potato and a few splashes of hot sauce and crumbled bacon. Not run through a food processor.[image deleted]

@soar2newhighs Oooo!!! Maybe I should give leeks another try! That looks a lot better than my soup!
@4meAndyou if you do, give them a good clean. But even if you use regular onions, you’ll pretty much get the same results.

@soar2newhighs Yes, but the leeks LOOK very pretty in the soup. I suppose I could use scallions...😊
