This is one of my easy, go-to recipes for fall and winter. It's one I found online several years ago and altered to make it my own. Takes about 45 minutes from start to serve, and is even better the next day.

@Lilymoon The first time I tried lentil soup is was sort of bland and I didn't try it again for years, but as I grew older, stopped eating beef and pork and generally wanted to eat healthier, I knew it was time to try them again. Now they are a staple in my pantry and I make and eat lentil soup often. Spiced up, full of veggies lentil soup, that is.
