Salmon Strips as soft as butter with crispy skin...Sorry...I ate them...no photo available... :D

3 salmon strips with skin on one side, 2 to 2 1/2" thick
Non-stick cooking spray
McCormicks Cajun Seasoning
3 tsps butter

Heat stainless steel frying pan on high heat after spraying with non-stick cooking spray. When pan begins to smoke, lay the salmon strips in the pan skin side down in the pan. Cook on high just until 1/4" of the salmon appears to have cooked when looking at the side. Reduce heat to medium. Skin will be crispy and dark brown, almost black.

Sprinkle the raw side of the salmon generously with Cajun seasoning, then flip so the raw side is down in the pan. Pan will still be hot enough to sizzle a bit.

Cook for about 2-3 minutes, and then lay 1 tsp of butter in the pan next to each salmon strip. Allow the butter to sizzle a bit under the Cajun seasoning.

Turn off the heat and allow the salmon to sit in the pan while waiting for your veggies or rice to complete, and serve!

I don't care for salmon skin, but this skin is nice and crispy and the salmon is as perfect and soft as butter!
