Ground Bison Stew, half homemade.



1 lb ground bison
2 onions, chopped and sauteed
2 potatoes, cubed, boiled 12 minutes and drained
butter, about 3 tablespoons.

Non stick cooking spray.

1 can diced carrots, drained
1 can cut green beans, undrained
2 jars Heinz beef gravy
1 packet dry onion soup mix

Ground black pepper
Salt.


Spray a 3 quart cast iron dutch oven with non-stick cooking spray. Preheat on low, add 1 lb ground bison, sprinkle it with salt, and chop and break it into small chunks with a spatula that won't scratch the cast iron. (Silicone or Teflon). Continue to cook and chop until very little liquid is left in the pan.

In a small fry pan, add the butter and the chopped onions, and heat on low.

In a 2 quart saucepan, boil water for cubed potatoes, and boil for 12 minutes.

To the ground bison, add the dry onion soup, stir well, and then add the undrained cut green beans, the drained carrots, the beef gravy and the pepper. Drain the potatoes and add them to the pot, and add the sauteed chopped onions.

Continue to heat to a low simmer, then turn down the heat to low. Stir well, and allow the mixture to bubble slightly.

Taste before serving, and add salt and pepper to taste if needed.

Serve with biscuits or bread.
