Camarones Flores (Jumbo Shrimp) with MY Special Sauce
8 raw jumbo shrimp, cleaned, deveined and tails removed
8 strips hickory smoked bacon
8 cloves garlic, mashed
4 wooden toothpicks, broken in half
Place mashed garlic on a plate. Roll shrimp in garlic. Wrap bacon around shrimp, fastening with 1/2 toothpick at each end.
To barbecue (the best flavor) raise rack to the highest level. Over white hot charcoal broil 4-5 minutes, then turn, and broil 4-5 minutes on the other side. These are delicious plain, or served with MY special sauce. This serves 4 as an appetizer or serves 2 as a main course.
MY Special Sauce
1/2 cup sour cream
1/2 cup sharp cheese spread (Wispride or other) or melted cheddar cheese
1 or 2 hot pickled jalapeno peppers with seeds and stems removed (amount depends on your liking for "hot stuff")
2 teaspoons commercial hot sauce, such as Franks Red Hot Sauce (do NOT use Tabasco) as this calls for a lighter flavor
Blend all ingredients in a food processor until smooth. Serve with Camarones Flores. Leftovers may be used as a dip for Tortilla chips.
