bacon bolognaise

Ingredients
400g spaghetti
1 tsp olive oil
2 large carrots
1 finely diced onion
3 salad tomatoes
8 mushrooms chopped
200g pack smoked bacon lardon
190g jar sundried tomato pesto



Method
Boil the spaghetti following pack instructions.

Peel, chop and dice carrots, onion, tomatoes

heat the oil in a non-stick pan.

Add the carrots, onions mushrooms tomatoes and bacon, and stir well.

Cover the pan and cook, stirring occasionally, for 10 mins until the veg has softened.

Tip in the pesto, warm through,

drain spaghetti

Serve and enjoy
