Tonight I made light pancakes to wrap lightly fried mixed vegetables.

Chiara likes these every now and then. I make them once a month on average, chopped onions and garlic, chopped tomatoes 🍅, chopped calabrese and celery, grated carrots all tossed in medium hot extra virgin olive oil, divided up to be rolled in the pancakes with some sea salt pepper and oregano 🌿 rub, then let them rest a few minutes before serving.

You can dip them in a little more olive oil and eat with your fingers or cut them up and eat them with knife and fork! 🍴

Not quite as elaborate but a week+ ago I made crepe like pancakes with a just add water mix my daughter sent. After flipping them over a couple of times I added thin half fresh pear slices and a sprinkle of brown sugar to half and folder the remaining half over, taco style. Flipped over again and left it long enough for the pear slices to heat and melt the sugar.

The next day was similar, except it was queso cheese sauce and roasted asparagus that got folded into the taco-like pocket. Even better!

@Khenpal1 I never add much garlic to anything I cook, and onions, usually just half a red onion is chopped up
