I made pancakes - apples pureed and used instead of an egg for the batter and of course, Maple syrup. Delicious! I don't often make pancakes, and when I do, I make half a recipe and then make just two large pancakes. One for immediate consumption and one I put in the fridge for tomorrow's breakfast.

@Baybreeze The donut maker at the Winchell's I worked at in high school made the BEST apple fritters, his secret was a shot of apple jack liquor in the fritter mix.
