There is nothing better on this earth than a Carando ham. Even though they perform the sacrilege of pre-slicing it, I have never tasted a ham soooo good! I don't buy bacon very often, because it is mostly fat, and the fat has to be rendered out before I can stand to eat it.
I buy large non-Carando hams on sale with the shoulder bone in, and cut them myself. That way I can discard excessive fat, and freeze the big ham chunks in quart sized ziploc freezer bags.
I use the ham to make sugar free "baked beans", using pinto beans, Splenda, bay leaves, Herbes de Provence, salt, and pepper, and of course, big bites of ham. I cook it all in my crockpot for about 24 hours, and the beans turn an amazing shade of dark brown, and look JUST like baked beans made with molasses.
