It's strange that after a stressful week

I suddenly feel like cooking lots.

Pardon, only got time to type it out today:

Pico de Gallo/Salsa Fresca

Serves around 6 people

3-4 Roma or Plum tomatoes
1/2 a cup of onion (white, red or yellow)
1 Jalapeño (add more if you like more heat)
1/2 cup of cilantro leaves
2 tbsp lime juice (preferably fresh)
1/2 tsp salt (or to taste)
1/8th tsp black pepper (or to taste)

1. Dice and mix all ingredients except lime.
2. Squeeze the lime over it
3. Mix and let rest for the flavours to meld.

Stores about 1 day in the fridge.
