I miss having a garden just because of salads like that. Add a bit of Vidalia onion, and I'm happy.

I make salads like that quite often. I use lemon or lime juice, olive oil, salt and pepper for the dressing. And either cilantro or parsley if I have it and sometimes use green onions or shredded onions in it.
