Just whipped together this cucumber tomato salad from garden cucumbers and tomatoes. I added thin sliced red onions (not from the garden). I also added minced fresh basil and Italian parsley we’ve grown ourselves. The dressing is just a fresh squeezed lemon and a couple tablespoons of robust olive oil.

I make salads like that quite often. I use lemon or lime juice, olive oil, salt and pepper for the dressing. And either cilantro or parsley if I have it and sometimes use green onions or shredded onions in it.
