Are you a fan of Eggplant? The food 🤨

Finally made eggplant rollatini again 😋 I like mine toasty w/extra sauce.. It’s so good, but just so time consuming to make!

A thin slice pepper jack under the mozz/prov blend 😋 I have proof my arteries are clear btw 😅

There’s a piece of chicken in here too..

Yes when it is grilled or made into an omelette or a spicy stew with chicken, onions and tomatoes…love it served over saffron rice.

@MellyMel22 It takes on the flavors of how you season it and what you cook with it, kind of like tofu does.

@cherokeepatti I don’t like tofu, but the only way I haven’t liked eggplant as when it was so thick and seemed a tough texture. Those times were in restaurants.

@MellyMel22 I wouldn’t like eggplant cooked that way either.
