Are you a fan of Eggplant? The food 🤨

Finally made eggplant rollatini again 😋 I like mine toasty w/extra sauce.. It’s so good, but just so time consuming to make!


A thin slice pepper jack under the mozz/prov blend 😋 I have proof my arteries are clear btw 😅

There’s a piece of chicken in here too..

@BeachGirl47 If you like a little spice, you should try it! I used pepper jack (not too hot) and hot habanero(which was really hot).

@BeachGirl47 I do too. I slice the eggplant extremely thin!

@MellyMel22 I slice it thin too. Then i dredge it in eggs and coat with the bread crumbs

@BeachGirl47 The past few years or so I’ve been coating them with flour before dipping them! They hold better and I now use buttermilk in place of the eggs(it doesn’t hold as good as eggs, but the flour first helps a lot).
