Are you a fan of Eggplant? The food 🤨

Finally made eggplant rollatini again 😋 I like mine toasty w/extra sauce.. It’s so good, but just so time consuming to make!


A thin slice pepper jack under the mozz/prov blend 😋 I have proof my arteries are clear btw 😅

There’s a piece of chicken in here too..

😋All looks incredibly delicious. I remember trying eggplant parmesan years ago and it was terrific.
Unfortunately, it doesn't agree with me. Must be a food allergy or something.

Kudos to you, though; you've got skills!!

Yeah, it really bothers my stomach and irritates the throat & tongue.
Same reaction I have to cashews.

@SethGreene531 Oh wow. I used to take activated charcoal when I’d have a lot of eggplant! Helped me with stomach pain it gave me.

I'm glad you found a remedy.

I've heard about activated charcoal and the wonders it works.
Seems to be a dependable solution for any stomach or digestive problem.

@SethGreene531 You might wanna make sure the throat thing isn’t an allergy though! Pineapple sometimes just similar to me throat wise.

Just be careful if you try the activated charcoal if you’re taking any meds, make sure you take it apart.
@MellyMel22 I understand Pineapple, it can be brutal.
Probably hits the skin the same way it tenderizes meat.

I'm almost positive mine is an allergy. I react the same way to other items that were on the doctor's test list.

@SethGreene531 Well an allergy would need far more than activated charcoal!

There’s something in eggplant that I can’t spell that’s very high and when I had it with zucchini which is also high in it, it gave me bad pain, till I had the activated charcoal with it next time. I’ve had allergic reactions with my throat eating other stuff high in it that I normally eat. It’s just that combined together it messes with me.
@MellyMel22 Salicylates...also the thing causing Aspirin allergies. Eggplant: They're in the same family as tomatoes and peppers, so people are often allergic to those too.

Zucchini's thing is a protein the body misidentifies as a threat. Like avacado, banana, ragweed, & melons.
If you react to these you may have a latex allergy also.

If you get an itchy throat or mouth as well as stomach pain, it may be serious.

I had to get an epipen.

It was either that the charcoal breaks down that or something else that it needs to be able to break that down.

Yes! But some people are more sensitive to the aspirin and that kind of stuff and some people are more sensitive food wise, like I am. I think certain soaps have more of it in it that irritate me too, shampoo too- all of them do it to me. My hands get raw if I use them- Some Palmolive ones do it to me, so I avoid it all.

I have an EpiPen too! Got yelled at by my allergist for not using it the last time. He said next time I can die if I do that again 😬

Right. Seems like certain stuff like charcoal tames a reaction, sometimes cooking the fruit/vegetables works too, or other combinations.

I get what you're saying about Asprin's lesser reaction in some people.
I react to the food big time, but Asprin mildly & only once.
Soaps, cleaners, even some garage chemicals irritate skin.
Like you, liquid soap kills my hands. It makes the them raw.

LOL doctor's freak about the epipen😂. Or if they know you've been careless about triggers.
There used to be a TWINject pen that had the orange to the thigh autoinjector, and a 2nd hypodermic.
The rationale being: each needle buys you 10 minutes...enuff to get to most ERs.
Now you just buy 2 pens...they're crazy $$$ without insurance...I had none at the time.

Alternatives are liquid Benadryl; and some say, salbutamol asthma puffers(???).

I think mine is single. They are insane. I can’t remember who it was but a friend told me they had to buy one and it was outrageous. There was also a class action suit for them.

That’s repeated to aspirin I think which would prob be worse for me if I’m having a reaction to the Salicylates. Normally I’d say I’d prob be okay, but during a reaction, I’d be afraid 😱

My throat swelled with only the caskets of amoxicillin and benedryl stopped it along with allergy meds I also took 😬

@MellyMel22 TY, it's a learning process, but you adapt.
Likewise, I regret food allergies are an added nuisance you've dealt with.

The lawsuit is familiar...price gouging. $65-75/ pen year #1. $200+, year #2.

Same, if Salicylates in aspirin are ever driving a reaction it'll be bad.

TBH, not sure a pen would help me. But still carry. Like your amoxicillin incident, the reactions are extreme. So it's avoidance instead.

To date, pea soup or raw carrot was the worst. A cup of pea soup kicked off in 2 minutes. The 1/4 bottle of benadryl + hayfever tablets = no effect.

90 mins, swelling leveled off on its own, slowly faded.
Pen & phone were out, but didn't want the ambulance/ER drama. So I waited🤦‍♂.

Yeah. I could take baby aspirin without a problem, but I imagine if I try to while having a reaction to the food stuff it would probably make it worse.

Yeah, best to avoid. My allergist is lost as far as what it is that I am allergic to. I had tonight what I had a reaction to breathing wise w/no issues. I had the issues I did have a cucumber wine and I believe cucumber is high in that so I don’t know if it was that or what. All I know is I gave away the other bottle I bought. The more I drank it, the worse I got. I did have a reaction like that when I had cucumbers, olives, and I forget what else, but they were all high in that stuff I believe. Another time it happened with Olive bread. I make olive oil all the time never have a problem with it, but this one came from a bakery. So weird.

Oh wow, sounds like you have a not so common allergy too. You did the same thing that I’ve done avoiding the EpiPen lol.. my doctor was yelling at me 🤣

I don’t believe so. I had a basic allergy test and then he tested me for a broccoli allergy and I forget what else 🤔 he was trying to get an idea from the stuff that I ate one time. He said that I have a rare allergy to both MRI and CT scan contrast. He said together it’s rare to have both allergies. I was searching to see if there was salicylates in the dyes 🤣 They’re in everything, but higher in certain things.

I agree, low dose, baby aspirin is a safer bet if you really need it. So long as a food trigger doesn't happen.

I reacted only once to full strength aspirin in mild hives, and taken it since.

It's apparently super dangerous though.

LOL the EpiPens, yes we've both cheated death 🤣.

They are on a rarer side. We've got fussy immune systems 🤦‍♂

Broccoli....I can't eat it raw; but you were okay ..that's a relief!
You're probably okay with watermelon also then. I can't have it.

Whoa, a breathing reaction, that's really frightening. Lungs swell like throats.
Olives are high in histamines and tannins. Huge triggers.

Most wine is also.
If you're making cucumber wine, extra tannin is added. So that could be part of your trigger.

There's so many things, it's impossible to identify the full range of an allergy. . . I completely relate. New stuff's added each year.

CT/MRI contrast dye issues can be quite serious. Definitely good to know about before procedures.

But with salicylates, etc, in everything, it's a
minefield.

I remember reading about an aspirin allergy how dangerous it can be because people can take stuff that they don’t know has it in it. I think he said.

I’ve never tried broccoli raw. And ever since I tried broccolini, I haven’t bought broccoli! I’m sure it’s got the same stuff in it. I’m good w/ watermelon. It’s my favorite fruit. I haven’t heard of anybody. I haven’t heard of anyone w/issues with it.

I actually bought the wine at ShopRite 😬 It was cucumber flavored.

Yeah, well I experienced issues during a procedure of each and both nurses acted as if I was overreacting and my allergist was livid. He said both reactions were very clear serious allergic reactions that could’ve killed me, esp the next time if I went by their reactions and did it again.

Yeah, when I looked into that, I saw it in pretty much everything including plastic bottles if I’m not mistaking.

The contrast incident is familiar.
Hate how hospital staff negate patient concerns. So arrogant!

Plastic bottles?? That's unexpected!

LOL we are special indeed. But given these challenges because life knew we were capable of rising above. And we always do.

@SethGreene531 I knew about some, but I wonder if Sudafed used to have it. They changed something a while back and it was okay when I stupidly tried it again, but before that I had severe stomach pains like I was dying. I had a similar reaction as Zithromax.

Yeah, it’s really scary how they can’t always be trusted. I have to have my MRIs done in a hospital now with a doctor available in case I react and I have to be premedicated and they’re also trying to use only a different contrast now to be safer.

I guess you’re right. Hopefully we don’t have any more serious issues like that though 😅
