Finally made eggplant rollatini again 😋 I like mine toasty w/extra sauce.. It’s so good, but just so time consuming to make!

A thin slice pepper jack under the mozz/prov blend 😋 I have proof my arteries are clear btw 😅

There’s a piece of chicken in here too..

I enjoy eggplant Parmesan when I have the time to make it. It's truly delicious
