Possibly Minestrone.
This time of year the garden is full of root vegetables.
Another month and I'll be digging up everything before the frosts hit.
So I'll wash; trim; peel and cook much of it and then create soups and cassaroles for the freezer then I can just grab a bag; defrost it; add leftovers and I'll have a decent warming winter soup.
