I am going to have a mental breakdown over meringue

1/2 cup of egg whites and 1tsp cream of tartar. The egg whites are room temperature. I washed, dried, and then rinsed the mixer and bowl with vinegar and dried again. I can’t get them to stiffen. I’ve tried a kitchen aid, a hand mixer, and an immersion blender 😩
I have spent hours trying this. I’ve started over several times

I’m glad you solved it. I had a baking meltdown once when I was trying to make persimmon bread and it just wouldn’t rise or bake in the middle; it was still liquid in the center no matter what I did. It was driving me crazy. Apparently I just added too much persimmon pulp and there was nothing I could’ve done. I had to throw it out :(

Next year I made it again and it turned out perfectly because I measured the amount of pulp exactly.

I wish I had some tips for ya. Meringue is something I’ve never taken on. Feels out of my depth and I’d rather maintain my sanity.

@itsok I’ve had to do that numerous times while baking. I certainly don’t want to encourage you to give it up today, but I’ve learned sometimes the defeat is just that powerful that it requires a bit of space to regroup.

Okay, now I feel like I wanna try it too haha.

Make a list of what does not work. Research. Try again. But for now, I think you need to rest and maybe watch one or two eps of chill shows to relax first. Try again later. :)

I have to add sugar slow. But only after they already are foamed

If you aren't using sugar. Maybe that problem?

internet says to add sugar after the eggs are foamy not stiff. you should be able to get foam with even just a a fork so it should work. and not to use fake eggs only real fresh seperated egg whites. maybe youre being impatient?

Maybe it’s the tartar . Try only egg whites and sugar. First beat the egg whites until they are moderately firm then add the sugar. It can’t have any traces of yolk, or else it won’t firm.

They take a f*cking lot of time and nearly perfect conditions, it's a battle already lost in the beginning, especially with a sh*t oven like mine.. the few times I've tried making them I ended up with something that more than a dessert worked better as glue

@FoxyQueen yup. And some people are saying don’t add that, so I’ve tried that too. I feel like I’ve tried everything possible

I have found that the tiniest bit of egg shell will prevent the whites from forming peaks.

How long have you given it with the kitchenaid? Are these actual egg whites separated from eggs or from a carton?

@Sophiiee 20 minutes with the kitchenaid. I’ve tried 100% egg whites from a carton for most of them, and then borrowed 4 eggs I separated myself for one attempt.

There’s a chance the boxed egg whites have a stabilizer or something that’s not present in actual eggs that could prevent forming a meringue - also, start with the sugar already added to the eggs whites as you begin whisking, and then add the cream lf tartar once foaming. Otherwise, sometimes it’s good to just call it a day and visit your favorite bakery and give it a go when you don’t want to toss your mixer out the window!

@fun4us2b not initially. I got it. No lemon juice. The cream of tartar did that
Put a Viagra in them. They'll get stiff then. ;-)
