How do you keep your lettuce from getting soggy? Can it be refrigerated?

How do you make lettuce salad?

Which kind of lettuce?
Romaine, I separate the leaves, wash them, wrap them (in bunches) in paper towel and put into a plastic bag (ziploc or otherwise) You can also store the paper-wrapped bunches in a plastic container if you prefer. It keeps in the refrigerator for close to two weeks this way.
Head lettuce (iceberg) I keep wrapped tightly in the plastic wrap. After I use any of it, I be sure to wrap it tightly again. Lasts in the fridge up to a couple of weeks this way.
Same goes for kale.

Tip: When buying pre-bagged lettuce or salads in the store, choose the ones which seem flattened, or without any air in them. When the greens start to 'turn' they emit a gas, which puffs up the bag. So the less 'puffy' the bag is, the better!
Another tip: wrap your celery tightly in tinfoil. I swear, it will last for weeks this way!!

I love shredded lettuce for my salads but they only lasted one day so I was pretty upset. They started getting limp and brown and soggy, the second day. I love the shredded lettuce it saves time and all but it looks like I'm going to have to start buying the Romaine.

So you wash the leaves and while they're still wet you Bunch them up, then put a paper towel around them tightly or what? If they're wet why don't they get soggy in the ziplock bag? I just am having a hard time understanding why, if they are still not dry all the way, why they don't get soggy and wilty.

@LadyGrace Sorry, I should have been more clear about that part....no, I don't leave them 'wet'....I shake them off and pat them dry with a kitchen towel before wrapping them. After that, any moisture is caught by the paper towels. And you want to know a thing about peppers....? To keep peppers fresh for super long ([i]weeks, I tell ya[/i]!) just cut the tops off of them so they are flat across the top, remove ALL seeds and ribs (clean them out really good, don't leave anything inside) put paper towel down on the bottom of a glass storage container (I fold one or two pieces to give double layer across the whole bottom), place the peppers cut-side down onto paper towel, and close the lid. I swear, they will keep for weeks. I just used the last parts of a red and yellow pepper which had been put in there two weeks ago (AND they had been in the fridge prior to that! I only put them in the glass that way [i]after[/i] I cut them open!)
@ImpeccablyImperfect Great advice. Thanks!! Seems like a lot of trouble to me to wash off each leaf and then dry them haha but I'll have to do that. I like my lettuce shredded, from the bag at the store. It just seems so much more convenient. I could probably still buy the bags and then wash them off, shake them, place them on a paper towel and roll them up to get the worst of it off and then wrap them in another paper towel and put them in the fridge in a baggie, right? I have those gallon Ziploc bags. You sure are a big help. I really appreciate you. 👍🌹

@LadyGrace when they chop the lettuce the water in the leaves start eeking out and that starts the process of it going bad. It’s better to buy the whole lettuce or the boxes of lettuce with whole leaves in it I think.
@cherokeepatti yeah I remember what you were saying on how that makes the bag blow up and all. I appreciate that. I'll definitely start only buying the whole ones. 🙏💖👍

@LadyGrace There is a lady from India who came up with something to help with produce not getting moldy and bad. It was paper that was soaked in fenugreek water and dried. I don’t know if the product is still being sold but it was suggested for lining the produce bins in the ice box with it. Something like that could also be used in the bottom of a box of greens or strawberries (especially strawberries they mold pretty easily if not used quick enough).
@cherokeepatti I saw on the web one time where they said to buy some type of green plastic you put them in that would keep them good but I don't know. I like the other idea of just buying it whole and washing it and then using the paper towels. This is really great advice and Romaine lettuce is the most healthy as well, so I'll definitely have to start using that.

@LadyGrace oh, I just fill the sink with cold water and a bit of vinegar (I do this to all my fruits and veggies) then let it soak for just a few minutes...I don't go through each leaf individually....just dump them all in and then swish them around...then pull them out, and strain, shake, however you want to do that....it's not that much trouble, really. :)

Also, strawberries, berries, grapes....all those kinds of fruits, I wash and store in my large mason jars. They stay fresh in the fridge FOR SO LONG @TheOrionbeltseeker I hope you're paying attention here!! haha

@LadyGrace I have read that after the age of 60-65 that we really need to be careful with the types of foods we eat because our immune systems become weaker with age. It would be so much easier for us to get sick with bacteria or mold in our foods than someone who is younger and it wouldn’t really faze. This lettuce going bad so quick seems to be a good example of what to avoid.

@LadyGrace I have to be so alert. Have tossed out some leftovers that probably would have eaten if it was a couple years ago. Not worth getting sick and having to have antibiotics etc. now.
