It's got such a rich flavor but lighter than heavy cream imo. You just make sure the milk don't boil over, lol @SW-User

@SW-User i can imagine it needs to be watched and stirred more over a careful flame, kinda like risotto. and i use grass-fed whole milk, so it's gonna be nearly like cream when i do it... i bet
