Using food twice

Baked a large Russet potato. Scooped it out. Mixed potato w/ 1 egg, salt, pepper, flour and pressed garlic(optional). Formed into patties then placed into hot oil in a pan and let each side brown. Turned heat down, and let them heat through periodically turning over. Removed, let drain on paper towel, then plated them.

They look really good!

Good old versatile potato. I would use brown sauce and perhaps a bit of grated cheese..
