Paella. Day!

Saturday, here, is paella day. We all pitch in to make it, we have shopped for any additional items we need and we will get the huge pan the four rings of the hob to begin shortly! Our version is quite unique to us, we three crazy girls!

Extra virgin olive oil in the hot pan. Chopped onions, chopped chicken, sausage, sea bass, pimentos, crab meat, bacon, white beans, red beans, chilli, flaked cod, all simmering in tinned tomatoes, tomato cassata.

We add vegetables! Green olives, green beans, peas and chickpeas, pine nuts, and it simmers!

We add black rice! Wild rice from the Camargue! And more fish! It simmers in hot mix, red wine!

After the set time, it's ready to serve! It's different! Spicy! A sprinkle of pepper just before we serve any! Delicious 😋
