FISH TACOS
A few days ago I went shopping with my daughter Jessica, who announced that she wanted me to buy ingredients for fish tacos as served at Long John Silver's fast food.
"Well," I said, "what's in it? I can't duplicate something I don't know about."
"Well, Mom," said Jess, "they put this sauce on it. It's pink and kinda spicy hot."
"Tell you what," I said. "Let's go to Long John Silver's and have a fish taco, so I can at least guess what's in it."
Jess thought that was a great idea, and we drove over there and ordered fish tacos and drinks.
As I sat down to eat, the tortilla part of the taco flapped open, and there I could see just what was in it. I tasted the sauce, and knew immediately what it was.
"Okay," I said to Jess as we finished our lunch, "let's go to the supermarket. I know exactly how to make this now."
So here is my duplicated recipe. I hope Long John Silver doesn't come after me for copyright infringement, but then there is no secret to it and it consists of ordinary ingredients.
These are:
1 10-piece package of Gorton's frozen Crispy-Battered fish portions (the ones that look like long triangles)
1 package fajita-size soft flour tacos. They usually come ten to a pack and are six inches in diameter.
1 bottle Hidden Valley Spicy Ranch dressing
Shredded lettuce
Bake the fish according to package directions, being sure to flip them over halfway through baking time for an even crispness.
Warm the tortilla by placing it in the microwave for 10 seconds.
When fish portions are done, put one piece into half the tortilla, add sauce to taste, and cover with about 1/4 cup of shredded (or minced) lettuce.
Fold the other half of the tortilla over it, and serve it up!
Be careful--it can get a bit messy as the tortillas are open at both ends. Of course you can buy larger tortillas and wrap the fish in them, tucking in the ends, but then you won't duplicate the way it is served in fast food for around five bucks a shot!
So there you have it. Jessica was pleased, and so was the rest of my family.
